Lavash

Savory Lavash!
I looked high and low for a recipe for Lavash.
I used to enjoy it at a restaurant in Las Vegas,
at the Luxor, called the Sacred Sea Room.
This is one of my favorite unleavened breads.
It's delicious and very easy to make.
It's great for snacking. Perfect for Bruschetta,
cheese or along with Kalmatta olives.
Recipe:
1 cup of all purpose flour
1/2 tsp salt
1/2 tsp sugar
1 1/2 tablespoons of butter
1/3 cup milk
Mix together, flour, salt, sugar, and butter
by hand on a clean worksurface.
Make a well and pour in milk.
Blend until smooth and soft.
Wrap in plastic wrap and refrigerate for 1 hour.
Roll out with a rolling pin, until paper thin.
Brush lightly with olive oil.
Sprinkle with poppy seeds, sesame seeds, herbs, Kosher salt, etc.
Roll over seeds and herbs with a rolling pin to secure them.
Bake on 375 for 10-14 minutes...depending on how crispy you
prefer. Enjoy!

of the cake.

The ganache is made from Peter's Chocolate and is
awesome! Not too tangy, just perfect.

The icing on the cake is an Italian Meringue Buttercream,
which was like eating ice cream....delicious!

I had the opportunity to take a class with
Bronwen Weber! It was not only amazing to
see her work, but she's a true master of
her craft.
My sculpted lion came out a little crumbly,
because the fondant was dry and crumbly.
I am used to a different brand that is more
pliable. I still think it turned out great overall!

Spores

Think Nelson clock, Sputnik lamp

that "Retro Vibe" that I have been
feeling, lately!

Mad Jester

No you are not seeing double.
This cake was originally created last
fall during Colette Peter's Class.
I gave it a face lift and finally added the

after more than a few people kept saying that I
should!

1st Year Blog Anniversary

My Blog is a year old today!!!!!!!!!!!!!!

I cannot believe that I started cake decorating a year ago. It has been a magical experience.
I have met some of the most wonderful, generous people on the planet.

I remember how it all started...I was walking through Barnes and Noble, as I often do and caught a book out of the corner of my eye. It was Debbie Brown's "Naughty Cakes". Well, the title is naughtier than the book actually is:) I was amazed...I was intrigued at what could be accomplished with a cake. I instantly fell in love with cake decorating and the art of sugarpaste.

I signed up for classes at Joann's....I took 2 classes there, but wanted more indepth knowledge, so I went to Chicago to study at Wilton for 6 weeks. During my stay in Chicago, I had the opportunity to study with Colette Peters, to learn Lambeth, Sugar Art, Gumpaste and Fondant.

During the last year, I have accumulated a large cake decorating library as well internet resources.

My life is proof that if you get sick and tired of being sick and tired and make the decision to do something about it, great things can happen!

I look forward to an even better year!

Happy Anniversary Sin City Cakes:)

Present Cake

The "Present Cake"....If someone
purchased a cake like this for you
it would sure be a present! It took
3 days to make. Detail and color
make this a very fun cake!

7.19.2007

White Wedding Cake

It took approximately 12 hours.

7.18.2007

Green and Red Lambeth Cake

Lambeth is one of my favorite
cake decorating techniques. It requires
patience, discipline and a steady hand!

7.13.2007

Chocolate Ganache Cupcakes

These cupcakes are soooooooo delicious.
My moist, rich chocolate cake....
Filled with my famous chocolate buttercream...
Hand dipped in silky, smooth chocolate ganache...
Topped off with a swirl of vanilla buttercream!

Patty's Cake

I made this cake for one of my husband's coworkers.

7.11.2007

Kitty Cake

I wanted to work on another color scheme.
One that did not include pink!
This cake took 3+ days to make.

7.08.2007

Red, White and Black

One of my favorite color combinations.
Red, Black and White. Cornelli Lace, mini dots and
a handmade bow make a great combination!

6.29.2007

Colorful Cake

I love to work with color and non traditional
concepts in cake decorating. It's been a long
time since I worked on flowers so I added an orchid
and a fantasy Magnolia. This was just a practice cake,
so my family actually gets to eat cake :)

6.08.2007

Erin's Cake

I made this "Cupcake Cake" for my nieces 2nd
birthday. It is hard to believe that the little "Stinker" is 2!
At lunch with Erin and her father(my brother) the other day, I thought I would
die when she told me.."You don't know 'bout me TeeTee!"

Underneath all of that icing are some
of the most delicious cupcakes that I've ever had...
I know because I ate one before I made the cake!
It was more difficult to make than I thought...This is definitely
not some of my best work, but it was fun to make!

I really like working with fondant better than buttercream:)

5.28.2007

My Husband is 40!

Ok..no fancy fondant work here!
Doug lovvvvvvves chocolate cake and I knew
that a delicious, moist cake was all that mattered.
So.....I searched high and low and what did I find?
The best chocolate cake EVER!
The icing tastes just like the old, yummy "Hostess
Ding Dong Icing"...I say the old, because the new
tastes like the ingredients have been "stretched".
The recipe is easy to make but a heavily guarded secret...
Well, if you call me I'll give it to you:)
The border icing is a delicate, chocolate buttercream.

4.25.2007

Lovebirds

How adorable! These were fun to make.
I can easily see them on a wedding cake:)

The Groom

This was a fun project! I look forward to working on
more figurines.

4.20.2007

Wedding Topper

This is my first attempt at making figurines and I am so proud of how it turned out.
This is actually a wedding cake topper that can be customized. I can paint the hair, flowers, dress, skin color at the request of the bride. How cool is that?
Now, I need to make the groom....I'll post him later!

4.05.2007

The 40th Birthday Kickoff Celebration!

God knows I love Prince, but we didn't get to see him at $250 a head. You might ask, just what does one get for $250? Entrance into the "standing room only" night club. No food, no drinks, just entrance to the club. Only in Las Vegas! I'm sure he rocked the house. He puts on, by far, the best concert I have ever experienced.

Me and the love of my life. My husband, Dougles!

Standing on the Voodoo Lounge Staircase
Ok...

I know this blog is dedicated to cupcakes and cakes, but I could not resist posting a few pics from my kickoff celebration. I have vowed to party the whole month of April as a tribute to my 40th birthday! High atop the Rio Hotel at the Voodoo Lounge on the 52nd floor, we partayed til the wee hours of the morning!
FYI....My 40th birthday is April 12th:)

4.02.2007

Al's Birthday Cake

My Nephew, Al, turned 16 today! What does
every 16 year old want to do? Get their
driver's license, of course! This cake took
approximately 6 hours to make.

2.25.2007

Emeric's 7th Birthday

My little nephew celebrated his 7th birthday!
It seems like just yesterday I craddled his
little body in the hospital, the day of his birth....
A very proud aunt am I! He wanted a Superman
Cake. I envisioned Superman flying over buildings.
I actually baked sugar cookie "buildings" and painted
the facades with royal icing, but could not finish in
time for his party. So, Superman was left to fly
alone! This cake took 8+ hours to make.

2.22.2007

Valentine's Day Cookies

I was cleaning out my camera and what did I find?
Cookies that I made for the kids on Valentines Day.
They were very simple......Sugar Cookies covered in fondant.
Happy belated Valentine's Day!

Mom and Pop's 41th Anniversary

My mother and father in law celebrated 41 year's of marriage yesterday! Hat's off to them:)
First I started with my secret recipe Chocolate Raspberry Buttercream....Hey, I'd have to kill you if I gave you the recipe! I layered a super chocolate heart shaped cake, filling evey crevice with the chocolate raspberry buttercream.....covered it in chocolate ganache....and finally accented it with raspberries...Delicious:)

2.11.2007

Howard's 21st Birthday

My oldest son celebrated his 21st birthday! I am so proud of him.
I decided to create a cake that included his love of music and a crown
to top off the fact that he's destined for greatness:)

2.01.2007

1.27.2007

Dre's 21st Birthday

Today my oldest nephew celebrated his 21st Birthday!
He wanted a white cake with strawberry and my famous homemade buttercream icing.
I came up with the idea to design a cake that looks like a champagne bottle in an ice bucket.
Lucky for me there was already inspiration floating around on the internet. This project took 8 hours to complete. Dre had a wonderful birthday!

My Pies...

I know that I am late...These pies were from Thanksgiving. For some reason I didn't get a picture of my sweet potato pies. Pictured are the ever popular "Chocolate Pudding Pie" and "Pecan Pie"......They didn't last for long!

I Looooooooove Lemon

Lemon is my most requested cupcake! The ones that are shown in these pictures are lemon cake, with lemon filling and lemon buttercream. They are absolutely delicious!

11.06.2006

Greg's 42nd Birthday Cake

I made this cake for my cousin Greg's 42nd Birthday. He's a wild character, so I decided to make something wild! 3 layers were lemon w/ lemon filling, white with buttercream and yellow cake w/ vanilla pudding. 2 layers are made of styrofoam. (Greg's allergic to chocolate)

5 layers covered in marshmallow fondant! It was hard work. The fondant had to be brought to room temperature, first. The largest layer was a piece of work to cover. I used wooden dowels to support the layers.

11.03.2006

Cupcake Bag!

I was so excited to receive my "Cupcake Bag", which was custom made by www.isisbags.com. I cannot wait to order a large quantity.

The quality is awesome! The rhinestones on the bag sparkle around the cupcake and really make the bag shimmer.

Advanced Workshop with Colette Peters

I really wanted to push the limits in regards to the "Crooked Cake".....The only thing that is missing...is the "Jester's Head" on top of the cake.

Gumpaste and Fondant with Colette Peters

This was my final project for the "Gumpaste and Fondant Class with Colette Peters". I wanted to do something fun, so I came up with this cake!

Colette is one of the most humble and giving people that I've ever met. It's amazing to see "The Master" at work. I recommend that if you ever have an opportunity to work with her to jump on it with both feet!

Flowers in Colette's Class

These are the various flowers that we made in class. Some are real life others are "Fantasy Flowers". It's amazing to see the end result.

"The Sin City Mad Baker"

Hello Kitty for Ashley

My niece celebrated her 8th birthday and wanted a Hello Kitty esque cake with cupcakes. Being as spirited as she is, she took it upon herself to pick the colors and flavor of her own cake. My first mistake was assuming that I would be able to design her cake. Notice the "Hello Kitty" color flow is in red!

An Elmo Cake for LaDonna

This cake was for my god daughter. She wanted an Elmo cake. It was a marble cake, crumbed with chocolate icing and covered in fondant. It also had coordinating cupcakes in vanilla and chocolate.

My Class at Wilton

I was thrilled to be able to attend the Master Course at Wilton. Students came from all over the world to attend. Hong Kong, Hawaii, Alaska, Wisconsin, Alabama, Mississippi, Nevada, California, just to name a few. It was well worth attending!

Australian Method

Embossing on the Australian Method Cake
Australian Method
This is my Australian Method Cake. It is covered in fondant and the tecniques used are ribbon insertion and bridgework. It was mainly a practice cake.

Lambeth Course

Scrollwork
Cushion balls. This is a very unique overpiping technique that takes a lot of time and patience. It creates a 3 D visual of each cushion ball.
Scrollwork from the Lambeth Cake
My Lambeth Cake. It took a lot of effort to make this cake. The overpiping was tedious and working with the rings was a piece of work, needless to say. The Lambeth method is mainly used for show cakes.

Wilton Master Course Cakes and Flowers

My first wedding cake. I loved making this cake! I was able to make it as whimisical as I wanted.
My birthday sampler cake. This was so fun to make. I made everything on the cake, including each flower!
My first fondant cake. This was a fondant sampler cake with four different sides. Taking this class took the fear out of working with fondant. I learned some cool tricks to making a cake turn out smooth every time. It was one of my favorite classes.

My first birthday "spray".

My pulled sugar arrangement. The daisy is already starting to wilt from the humidity!

My first pulled sugar rose. I absolutely loved working with pulled sugar, but with the rain and humidity in Chicago they collapsed within a day:(

My very first gumpaste flower!

Practicing Stringwork

Royal Icing Flowers that I made during the Master Course

Wilton Master Course

I cannot believe that it's been almost 2 months since I updated my blog! I have been away learning new, wonderful things at Wilton and would love to share them.

I spent 3 weeks in Chicago taking Wilton's Master Course, Intro to Fondant, Intro to Gumpaste and Intro to Sugar Artistry.

I will return to Chicago on Sunday, Oct. 22nd to study with Colette Peters!

The Makeup Bag Cake

This cake was fun to make. I worked on this project with my niece to introduce her to cake decorating. I used a 6" round strawberry cake. Filled it with strawberry filling and crumbed it
with strawberry buttercream/creamcheese icing. The fondant was not the easiest thing in the world to work with. It dries quickly and often pieces that are pressed together come apart. We still had a great time making the "cosmetics". I used lots of powdered sugar to keep it from sticking to our fondant board. It was fun and it turned out better than I expected!

Strawberry Creamcheese Cupcake

Strawberry cupcake with buttercream, creamcheese icing. The icing is like whipped topping. It was what was left over from the "Makeup Bag Cake". 3 taste testers approved this one!

My Brother's Birthday Cake

I made this cake last night also. It was originally supposed to have roses and fans made from "Chocolate Plastic", but unfortunately, I used too much glucose and it became "Chocolate Soup":).

I finished the design with rosettes and stars.

It's for my brother's birthday. I also used the chocolate, raspberry buttercream icing and covered it in chocolate ganache.

This is my first 2 tiered cake!

Chocolate Raspberry Cupcake

I had to use the rest of that chocolate raspberry buttercream icing!

Absolutely Delicious!

A Beautiful Cake

I made this cake last night for my mother and father in law! It's Devil's Food, crumbed in chocolate raspberry buttercream, covered in chocolate ganache.

My husband dropped it off this morning and they told me it was the best cake they've EVER had in the 74 years they've been on this planet!

What a compliment:)

The Cuptini

The "Cuptini" is my original, signature cupcake. I made it as a tribute to Martini Drinkers worldwide. When you can't have a martini, the Cuptini will do!

Last Week's Cake-The Yellow Rose of Vegas!

I was so proud of this cake. This was my graduation cake from last week. I learned a valuable lesson after falling behind a little. Icing is ultra sensitive and while we were completing our projects, the store was very warm and my icing did not want to cooperate. But overall, I feel I did a great job!

One beautiful cupcake!

Chocolate Cupcake with beautiful flowers!

My First Wilton Rose

I worked hard on this!

A New Adventure!

I am so excited about sharing my new adventure in cupcaking! (I think I just coined a new word)

What started this new adventure was a book that I picked up at Barnes and Noble called, "Naughty Cakes" by Debbie Brown. I immediately fell in love with fondant and the idea of designing specialty cakes. I signed up for a class at Joann's to get a foundation in cake decorating but was not prepared for what I found....

It was love at first sight! I absolutely have fallen head over heels with cake decorating.

I recently completed my first Wilton Class. I learned how to properly bake, torte, fill and ice a cake. I also learned some really cool decorating techniques, such as how to make a Wilton Rose, sweetpeas, and also the shell and star borders.

This week I will start my 2nd set of classes and also a candy making class on Saturday.

I will be making a wedding cake with cupcakes for my cousin's wedding on Aug. 11th and 2 birthday cakes for next week for family members. I'll be sure to post them!
