These are Peach Mousse Cups that I made for
my final in Quantity Baking.
I created white chocolate cups, filled them
with a White Peach Mousse. The center is a
Raspberry Chambord insert. I topped them
with fresh raspberries and a Peach Torani Glaze.

which was held at the Las Vegas Convention Center.
I didn't place, but I learned a great deal about competition.

This was my final piece that I made

This was my final piece in cake class.
I love Magnolias!
Chocolate Cake brushed with a
Chocolate Kahlua syrup and filled
with cookies and cream.
This is my final piece from Sugar Art.
It is inspired by Dale Chihuly, my
favorite glass artist.
The soft rolls, muffins and cookies were
my final project for Principles of Baking.
I finished under time...and slightly underproofed
but according to the Chef, I did an awesome job!

This is a sugar tree...of course, it's made from a
poured sugar base, with a pulled sugar tree and
leaves. The base is sugar and the tree and leaves
are Isomalt. Upon completion, the tree will have
yellow, orange and red leaves as a tribute to
the beautiful fall trees across the country:)

Today my blog is 2 Years Old......
Time really does fly...
In the last 2 years, I have grown so much as a cake decorator.
I've taken classes at Wilton, with 3 master cake decorators and attended
some of the most fun conventions, ever.
I've amassed a cake decorating book collection that is totally amazing.
I also, have a ton of tools. I am so very fortunate to have found something that I love.
With that, I'll be attending school this fall at CSN to obtain my degree in Pastry Arts....
In other words, I'm on my path to become a world reknown Pastry Chef and to opening
one of the most awesome cake studios on the planet! Stay tuned;)

'Tis the season for cool treats.
This is my first ice cream cake. I didn't put a bottom
border on it because it started to melt around the base
of the cake.
The ganache is made from Peter's Chocolate and is
awesome! Not too tangy, just perfect.
The icing on the cake is an Italian Meringue Buttercream,
which was like eating ice cream....delicious!
In the future I will use less cake and more ice cream:)

Cookie Bouquet for Valentine's Day:)
How To:
Bake sugar cookies, prior to baking stick a wooden
skewer into the cookie more than half way.
Cool cookies after baking.
Take cookie cutter and cut fondant shape just like the cookie.
Apply fondant to cookie with Karo syrup.

God knows I love Prince, but we didn't get to see him at $250 a head. You might ask, just what does one get for $250? Entrance into the "standing room only" night club. No food, no drinks, just entrance to the club. Only in Las Vegas! I'm sure he rocked the house. He puts on, by far, the best concert I have ever experienced.

I made this cake for my cousin Greg's 42nd Birthday. He's a wild character, so I decided to make something wild! 3 layers were lemon w/ lemon filling, white with buttercream and yellow cake w/ vanilla pudding. 2 layers are made of styrofoam. (Greg's allergic to chocolate)
5 layers covered in marshmallow fondant! It was hard work. The fondant had to be brought to room temperature, first. The largest layer was a piece of work to cover. I used wooden dowels to support the layers.

I was so excited to receive my "Cupcake Bag", which was custom made by www.isisbags.com. I cannot wait to order a large quantity.
The quality is awesome! The rhinestones on the bag sparkle around the cupcake and really make the bag shimmer.

This was my final project for the "Gumpaste and Fondant Class with Colette Peters". I wanted to do something fun, so I came up with this cake!
Colette is one of the most humble and giving people that I've ever met. It's amazing to see "The Master" at work. I recommend that if you ever have an opportunity to work with her to jump on it with both feet!

My niece celebrated her 8th birthday and wanted a Hello Kitty esque cake with cupcakes. Being as spirited as she is, she took it upon herself to pick the colors and flavor of her own cake. My first mistake was assuming that I would be able to design her cake. Notice the "Hello Kitty" color flow is in red!

This cake was for my god daughter. She wanted an Elmo cake. It was a marble cake, crumbed with chocolate icing and covered in fondant. It also had coordinating cupcakes in vanilla and chocolate.

I was thrilled to be able to attend the Master Course at Wilton. Students came from all over the world to attend. Hong Kong, Hawaii, Alaska, Wisconsin, Alabama, Mississippi, Nevada, California, just to name a few. It was well worth attending!

Scrollwork
Cushion balls. This is a very unique overpiping technique that takes a lot of time and patience. It creates a 3 D visual of each cushion ball.

My Lambeth Cake. It took a lot of effort to make this cake. The overpiping was tedious and working with the rings was a piece of work, needless to say. The Lambeth method is mainly used for show cakes.

My first wedding cake. I loved making this cake! I was able to make it as whimisical as I wanted.
My birthday sampler cake. This was so fun to make. I made everything on the cake, including each flower!
My first fondant cake. This was a fondant sampler cake with four different sides. Taking this class took the fear out of working with fondant. I learned some cool tricks to making a cake turn out smooth every time. It was one of my favorite classes.

I cannot believe that it's been almost 2 months since I updated my blog! I have been away learning new, wonderful things at Wilton and would love to share them.
I spent 3 weeks in Chicago taking Wilton's Master Course, Intro to Fondant, Intro to Gumpaste and Intro to Sugar Artistry.

This cake was fun to make. I worked on this project with my niece to introduce her to cake decorating. I used a 6" round strawberry cake. Filled it with strawberry filling and crumbed it
with strawberry buttercream/creamcheese icing. The fondant was not the easiest thing in the world to work with. It dries quickly and often pieces that are pressed together come apart. We still had a great time making the "cosmetics". I used lots of powdered sugar to keep it from sticking to our fondant board. It was fun and it turned out better than I expected!

I made this cake last night also. It was originally supposed to have roses and fans made from "Chocolate Plastic", but unfortunately, I used too much glucose and it became "Chocolate Soup":).
I finished the design with rosettes and stars.
It's for my brother's birthday. I also used the chocolate, raspberry buttercream icing and covered it in chocolate ganache.
This is my first 2 tiered cake!

I made this cake last night for my mother and father in law! It's Devil's Food, crumbed in chocolate raspberry buttercream, covered in chocolate ganache.
My husband dropped it off this morning and they told me it was the best cake they've EVER had in the 74 years they've been on this planet!

I was so proud of this cake. This was my graduation cake from last week. I learned a valuable lesson after falling behind a little. Icing is ultra sensitive and while we were completing our projects, the store was very warm and my icing did not want to cooperate. But overall, I feel I did a great job!

I am so excited about sharing my new adventure in cupcaking! (I think I just coined a new word)
What started this new adventure was a book that I picked up at Barnes and Noble called, "Naughty Cakes" by Debbie Brown. I immediately fell in love with fondant and the idea of designing specialty cakes. I signed up for a class at Joann's to get a foundation in cake decorating but was not prepared for what I found....
It was love at first sight! I absolutely have fallen head over heels with cake decorating.
I recently completed my first Wilton Class. I learned how to properly bake, torte, fill and ice a cake. I also learned some really cool decorating techniques, such as how to make a Wilton Rose, sweetpeas, and also the shell and star borders.
This week I will start my 2nd set of classes and also a candy making class on Saturday.
I will be making a wedding cake with cupcakes for my cousin's wedding on Aug. 11th and 2 birthday cakes for next week for family members. I'll be sure to post them!
